Chia Pudding with Fresh Fruit & Granola

Ingredients
- 1 tablespoon of chia seeds
- 2 tablespoon of Greek yoghurt (vegan yoghurt)
- Soak them in water for 30 mins and mix with yoghurt (can prepare overnight)
- Marmalade
- Honey
- Granola (homemade recipe here)
Steps
- Layer chia yoghurt mixture
- Add peach / fig slices (or any fruit in season)
- Add a layer of marmalade of choice
- Another layer of chia yoghurt mixture
- Drizzle some honey
- Top with fruit / granola
Fennel Salad with Almond Dressing

Ingredients
- 2 bulbs fresh fennel
- Grapes (Alternative: oranges, olives)
- Pecorino cheese
- 1/4 cup almonds
- 2 table spoon olive oil
Steps
- Wash the fennel bulbs, trim the ends, and thinly slice them (a mandoline works well for thin slices)
- Toast almonds in oven for 10minutes at 180C until golden brown, blend in food processor with olive oil, salt and pepper.
- In a large bowl, combine the fennel, grapes, shaved pecorino cheese. and pepper.
- Add almond dressing and gently toss.
Hearty Lentil Soup

Ingredients
- 250 g (1 1/4 cups) dried lentils, rinsed and picked over
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon dried thyme (or 1 sprig fresh thyme)
- 1/2 teaspoon smoked paprika (optional, for depth of flavor)
- 1–1.2 liters (4–5 cups) water or vegetable broth
- Salt and freshly ground black pepper, to taste
- 2 tablespoons extra virgin olive oil
- (Optional) a handful of chopped fresh parsley or coriander for garnish
- (Optional) squeeze of lemon juice for brightness
Steps
- Rinse lentils under cold water
- In a pot heat olive oil, add onions, celery and carrots
- Sautéed 5-6 mins until softened
- Add garlic and cook another minute until fragrant
- Add lentils, bay leaf, thyme, smoked paprika, and enough water
- Bring to boil then simmer for 25 minutes
- Remove bay leaf and season
