Italian Home Secrets - Passata & Pomodoro Naturale


During our summer tomatoes workshop, we were so lucky to learn Italian family recipes to prolong tomatoes for the colder months. Here's a recap on how we can make them at home too wherever you are.

Passata 

  • Wash and press the tomatoes 
  • Add them into a huge pot with onions, basil, a little salt for seasoning
  • Bring to boil and let simmer for 30 minutes until they are soft 
  • Blend them in a food processor until sauce like 
  • Put them back into the pot and bring to boil again
  • Bottle them into jars 
  • Place the jars into the oven for 100C for 30 minutes 
  • Keep for 2-3 years in your pantry and they are perfect for any pasta / lasagna 

Pomodoro Naturale

  • Wash and press the tomatoes
  • Add them into the jar and layer with basil and salt 
  • Continue to compress them 
  • Place the jars into the oven for 100C for 30 minutes 
  • Keep for 2-3 years in your pantry and they taste just like fresh tomatoes (use them as you wish) 

We also learned how to make sun-dried tomatoes and stuffed tomatoes, so as you can see - tmatoes are not just for summer time, but they can be enjoyed all year round. If you make them, show me your pantry all stocked up! Make Mama Maria Grazie proud :)
